WHAT IS WATYA?
Watya (Huatia or Guatia in Spanish) is a Quechua word for an Andean dish traceable to the Pre-Colombine Peru.
Watya is a traditional Peruvian earthen oven which dates back to the days of the Inca Empire. A banquet prepared with this sort of oven is known as a Pachamanca. This type of oven is commonly associated with the peasants in the Cuzco region in the Andes.

"Before the Pachamanca there was the Huatia or Watya. Farmers used this type of cooking for special occasions such as the harvest of the potato. They cooked it underground, with heated lumps of earth. The yachaq was in charge of the ceremony, therefore, did the cooking as well. During these ceremonies it was important that the gods, the Pachamama (Mother Nature) and the people were in complete harmony. Therefore, eating directly from Mother Earth’s belly, the fruits she bares showed the balance and joy of living in a community".
